Josh, originally from New Orleans, moved to Delaware, OH and started 1808 American Bistro in 2007. 1808 offers elevated casual-comfort food with his southern twist and has been a successful community staple for over 12 years. He originally opened the acclaimed Veritas Tavern in our Speck space (just two doors down from 1808) back in 2012. Veritas has continued to innovate and challenge culinary boundaries. As a result they have garnered many accolades and earned the the #1 ranking in Columbus Monthly many times. Veritas moved its location to Downtown Columbus on the corner of High & Gay Streets leaving space for Josh’s third concept……SPECK Italian Eatery. His vision for SPECK is fresh, modern Italian with a twist. Something fun and casual for everyone, yet with the same quality standards people have come to expect from our brand.
Energy & Culinary Passion
Even though Chef Mike is newer to SPECK, he is not new to the family. Mike was at Veritas in their Columbus location and was a integral part of the culinary team until he was offered a position opening a new concept in Southern California. After the project completed Mike returned home to Ohio. We are so happy he agreed to come on board to run the kitchen at SPECK. Mike brings some great ideas and technique, as well as a contagious, positive energy to the kitchen.
A little bit of everything…
Abby moved back to Delaware in 2015 after owning and operating her own restaurant abroad. She was hired as the Beverage Manager for 1808 American Bistro and has been a well known face in the community for over 4 years. As 1808 has grown, she recently took over management of it’s new Event Space. Then, she took on the challenge of working with Josh to make his vision for SPECK become a reality and opened the doors in April of 2019. She currently serves as the GM/Beverage Manager of Speck and Beverage & Events Manager for 1808. You will probably see her running back and forth on Winter Street between the two restaurants at any given time.
